broccoli
enoki mushrooms
baby carrots
sliced capsicum
honey mustard
shredded or whole mozzarella
salt and pepper
butter
aluminum foil
I made this yesterday at 12. I call it my midnight snack. Its something easy and healthy. FYI, I love broccoli. Like really. If someone could bake me a Broccoli Cake for my birthday, i'd be delighted! So here's my own creation of a midnight snack that you could try.
Steam the sliced broccoli and baby carrots in a saucepan. Add some salt and pepper.
Leave it to boil for about 5-8 minutes.
In a small bowl, pour some hot water and dip in the enoki mushrooms. Leave it for about 2 minutes tops.
Filter the excess water and leave it in the bowl while waiting for the broccoli and the carrots to cook.
When broccoli and carrots are ready, same thing.. Filter the excess water.
In a mixing bowl, put in the butter about 2 tablespoon and make sure it is in room temperature.
Add in the enoki mushrooms, broccoli and the carrots.
Lightly mix the ingredients with the butter.
Lastly, add in the sliced capsicum.
Before you bake the ingredients, make sure your aluminum foil is ready.
Depends on how small or big you want your portion to be.
My trick is to put in the shredded mozzarella first before putting in the rest. And then another layer of mozzarella before wrapping it up. Oh and also the honey mustard. If you like.
Up to your cheesy appetites okay.
Baked it in the oven for about 10 minutes because you don't want the veggies to be soggy.
Serve HOT. SEDAAAAAP!
